feat(docs): migrate VitePress to TypeScript and add Mermaid support

- Convert VitePress config and theme files from .mjs to .ts
- Add local search functionality to VitePress
- Integrate Mermaid diagram support via vitepress-mermaid-preview
- Update dependencies including VitePress to v2.0.0-alpha.12, Vue 3.5.21, and Vite 7.1.7
- Update Odoo image tag in README to mintsystem/odoo:18.0.20250909
- Rename initLogin to empty string in Odoo values
- Update task script command names for consistency
