Janik von Rotz c6a3083f5c breaking(postgres): update PostgreSQL volume mount path and default image version

- Change PostgreSQL volume mount path from `/var/lib/postgresql/data` to `/var/lib/postgresql` across README files and role defaults
- Upgrade default PostgreSQL Docker image from `postgres:14-alpine` to `postgres:18-alpine`
- Update documentation and configuration defaults in `README.md`, `roles/docker_compose/README.md`, `roles/postgres/README.md`, and `roles/postgres/defaults/main.yml`
